Classic French Cherry Clafoutis
Traditional clafoutis settles into a texture right between a delicate crepe and a baked custard. Sweet cherries release their juices as the batter puffs and browns gently at the edges. Snap a photo of your slice with CaloVibe to register your dessert macros in seconds.
Ingredients
- 350 g sweet dark cherries, pitted
- 3 large eggs, room temperature
- 240 ml whole milk
- 65 g granulated sugar
- 60 g all-purpose flour
- 14 g unsalted butter, melted
- 1 tsp pure vanilla extract
- 1 pinch fine sea salt
Instructions
- Preheat your oven to 180°C (350°F) and grease a 23-centimeter (9-inch) round baking dish with half the melted butter.
- Arrange the pitted cherries in a single snug layer across the bottom of the prepared baking dish.
- Whisk eggs, sugar, flour, milk, remaining butter, vanilla, and salt in a bowl until the batter is smooth and frothy.
- Pour the batter gently over the cherries and bake for 35 to 38 minutes until puffed, set in the center, and lightly browned.
Tips
- Let the dish rest for 10 minutes before serving so the custard sets cleanly for slicing.
- Frozen dark cherries work well if thawed and patted thoroughly dry with paper towels beforehand.
