Ingredients

  • 2 medium baking apples (like Honeycrisp or Fuji), cored
  • 1/4 cup rolled oats
  • 2 tbsp chopped walnuts or pecans
  • 1 tbsp maple syrup or honey
  • 1/2 tsp ground cinnamon, plus extra for dusting
  • Pinch of nutmeg
  • 1 tbsp water or apple juice
  • Optional: 1/2 tsp coconut oil for the crumble

Instructions

  1. Preheat oven to 375°F (190°C). Core apples, leaving the bottom intact. Score around the middle of each apple to prevent bursting.
  2. In a small bowl, combine oats, nuts, maple syrup, cinnamon, nutmeg, and optional coconut oil. Mix until crumbly.
  3. Place apples in a small baking dish. Fill each apple cavity with the oat mixture. Pour water or apple juice into the bottom of the dish.
  4. Bake for 30-40 minutes, or until apples are tender when pierced with a fork. Serve warm.

Tips

  • For extra flavor, add a few raisins or dried cranberries to the oat filling.
  • Leftovers store well in the fridge for up to 3 days and can be gently reheated.
