Ingredients
- 2 medium baking apples (like Honeycrisp or Fuji), cored
- 1/4 cup rolled oats
- 2 tbsp chopped walnuts or pecans
- 1 tbsp maple syrup or honey
- 1/2 tsp ground cinnamon, plus extra for dusting
- Pinch of nutmeg
- 1 tbsp water or apple juice
- Optional: 1/2 tsp coconut oil for the crumble
Instructions
- Preheat oven to 375°F (190°C). Core apples, leaving the bottom intact. Score around the middle of each apple to prevent bursting.
- In a small bowl, combine oats, nuts, maple syrup, cinnamon, nutmeg, and optional coconut oil. Mix until crumbly.
- Place apples in a small baking dish. Fill each apple cavity with the oat mixture. Pour water or apple juice into the bottom of the dish.
