Ingredients
- 1 cup strong brewed espresso, cooled
- 2 tbsp granulated erythritol (or preferred sweetener)
- 24 ladyfingers
- 1 cup light mascarpone cheese
- 1 cup plain non-fat Greek yogurt
- 3 large egg whites
- 1 tsp vanilla extract
- 2 tbsp unsweetened cocoa powder, for dusting
Instructions
- Brew espresso and stir in erythritol until dissolved; let cool. Briefly dip each ladyfinger into the cooled coffee mixture, ensuring they are moistened but not soggy.
- In a clean, dry bowl, whip egg whites to stiff peaks. In a separate bowl, gently combine light mascarpone, Greek yogurt, and vanilla extract until smooth.
- Carefully fold the whipped egg whites into the mascarpone mixture in two additions, maintaining as much air as possible for a light, airy cream.
- Arrange half of the dipped ladyfingers in the bottom of an 8x8 inch dish. Spread half of the mascarpone cream over them. Repeat layers and chill for at least 4 hours, or preferably overnight, before dusting with cocoa powder and serving.
Tips
- Do not over-soak the ladyfingers; a quick dip on each side is enough to prevent them from becoming mushy.
