Classic Mediterranean Chicken Salad

Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 4 cups mixed greens
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • For the dressing: 3 tbsp olive oil, 2 tbsp lemon juice, 1 tsp dried oregano, salt and pepper to taste

Instructions

  1. In a large bowl, combine mixed greens, diced cucumber, halved cherry tomatoes, sliced red onion, Kalamata olives, and crumbled feta cheese.
  2. Add the cooked chicken breast to the vegetable mixture.
  3. Whisk together olive oil, lemon juice, dried oregano, salt, and pepper in a small bowl until well combined.
  4. Pour the dressing over the salad and toss gently to ensure all ingredients are coated. Serve immediately.
