Classic Niçoise Salad

Ingredients

  • 2 hard-boiled eggs, quartered
  • 1 can (5 oz) tuna in olive oil, drained
  • 1 cup cooked green beans, chilled
  • 1 cup cooked baby potatoes, halved
  • 1 cup cherry tomatoes, halved
  • 1/4 cup pitted Kalamata olives
  • Mixed greens for serving
  • For the Vinaigrette: 2 tbsp olive oil, 1 tbsp red wine vinegar, 1 tsp Dijon mustard, salt, pepper

Instructions

  1. Arrange mixed greens on serving plates. Top with green beans, baby potatoes, cherry tomatoes, and Kalamata olives.
  2. Flake the drained tuna over the salad. Add the quartered hard-boiled eggs.
  3. Whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper for the vinaigrette.
  4. Drizzle the vinaigrette generously over the salad just before serving.

Tips

  • For best flavor, cook potatoes and green beans slightly ahead and chill them.
