Ingredients
- 2 boneless, skinless chicken breasts
- 2 medium zucchini, thinly sliced
- 8 oz whole wheat penne or rotini
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup plain Greek yogurt or light cream cheese

- Salt and black pepper to taste
Instructions
- Season chicken breasts with salt and pepper, then grill or pan-sear until cooked through. Let rest, then slice into bite-sized pieces.

Tips
- For an even quicker meal, use pre-cooked rotisserie chicken.
- Adjust the sauce consistency by adding more chicken broth or a little more Greek yogurt as desired.
