Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 medium zucchini, thinly sliced
  • 8 oz whole wheat penne or rotini
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup plain Greek yogurt or light cream cheese
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and black pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper, then grill or pan-sear until cooked through. Let rest, then slice into bite-sized pieces.
  2. Cook pasta according to package directions. While pasta cooks, heat olive oil in a large skillet over medium heat. Add zucchini and garlic, sauté for 5-7 minutes until tender-crisp.
  3. Drain pasta, reserving 1/2 cup pasta water. Add chicken broth and Greek yogurt (or cream cheese) to the skillet with zucchini. Stir until smooth and slightly thickened.
  4. Add cooked pasta, sliced chicken, and Parmesan cheese to the skillet. Toss to combine, adding a splash of reserved pasta water if needed to reach desired creaminess. Serve immediately.
