Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt (for biscuits)
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup milk (for biscuits)
  • 1 lb breakfast sausage
  • 1/4 cup all-purpose flour (for gravy)
  • 3 cups whole milk (for gravy), warmed

Instructions

  1. Prepare biscuits: Combine dry ingredients, cut in butter, then add milk to form a soft dough. Roll, cut, and bake at 425F (220C) for 12-15 minutes until golden.
  2. Cook sausage: In a large skillet, brown breakfast sausage over medium heat, breaking it up with a spoon. Drain excess fat, leaving about 2 tablespoons.
  3. Make gravy: Stir 1/4 cup flour into the cooked sausage and fat; cook for 1 minute. Gradually whisk in warmed milk, stirring constantly until the gravy thickens.
  4. Season and serve: Season gravy with salt and black pepper. Split warm biscuits in half and generously ladle the hot gravy over them.

Tips

  • For extra flaky biscuits, don't overmix the dough and use very cold butter.
  • Warm your milk for the gravy slightly to help prevent lumps and ensure a smoother consistency.
