Ingredients

  • 1 cup cooked chicken breast, shredded
  • 4 small flour tortillas (8-inch)
  • 1 cup shredded Monterey Jack or cheddar cheese
  • 1 tbsp olive oil
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1/2 tsp chili powder
  • 1/4 tsp ground cumin
  • Salt to taste
  • Salsa and sour cream, for serving

Instructions

  1. Heat olive oil in a skillet over medium heat; sauté onion and bell pepper until softened, about 3-4 minutes.
  2. Stir in shredded chicken, chili powder, cumin, and salt; cook for another 2 minutes until heated through.
  3. Place one tortilla in the skillet, sprinkle cheese over one half, then spoon a portion of the chicken mixture onto the cheese.
  4. Fold the empty half of the tortilla over the filling, press gently, and cook until golden brown and cheese is melted on both sides, about 2-3 minutes per side. Repeat for remaining quesadillas.

Tips

  • For extra speed, use leftover rotisserie chicken or pre-cooked chicken.
  • Serve immediately with a side of fresh salsa, guacamole, or a dollop of sour cream.
  • To prevent sogginess, cook quesadillas one at a time and serve promptly.
  • Add a squeeze of lime juice to the chicken mixture for a zesty kick.
