Ingredients
- 1 cup cooked chicken breast, shredded
- 4 small flour tortillas (8-inch)
- 1 cup shredded Monterey Jack or cheddar cheese
- 1 tbsp olive oil
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper
- 1/2 tsp chili powder
- 1/4 tsp ground cumin
- Salt to taste
- Salsa and sour cream, for serving
Instructions
- Heat olive oil in a skillet over medium heat; sauté onion and bell pepper until softened, about 3-4 minutes.
- Stir in shredded chicken, chili powder, cumin, and salt; cook for another 2 minutes until heated through.
- Place one tortilla in the skillet, sprinkle cheese over one half, then spoon a portion of the chicken mixture onto the cheese.
- Fold the empty half of the tortilla over the filling, press gently, and cook until golden brown and cheese is melted on both sides, about 2-3 minutes per side. Repeat for remaining quesadillas.
Tips
- For extra speed, use leftover rotisserie chicken or pre-cooked chicken.
- Serve immediately with a side of fresh salsa, guacamole, or a dollop of sour cream.
- To prevent sogginess, cook quesadillas one at a time and serve promptly.
- Add a squeeze of lime juice to the chicken mixture for a zesty kick.
