Ingredients
- 1.5 cups part-skim ricotta cheese
- 0.5 cup low-fat milk
- 2 tbsp sweetener (erythritol or monk fruit)
- 1 tsp unflavored gelatin powder

- 0.5 tsp vanilla extract
- 1 cup mixed berries (fresh or frozen)
Instructions
- Whisk ricotta, milk, sweetener, lemon juice, zest, and vanilla in a bowl until smooth.
- Sprinkle gelatin over 2 tablespoons cold water in a small saucepan; let bloom 5 minutes. Gently heat until gelatin dissolves, then stir into the ricotta mixture.
- Divide mixture evenly into four ramekins or small glasses. Chill for at least 4 hours, or until set.
- Simmer berries with a splash of water until softened for a quick compote. Serve panna cotta with cooled berry compote.
Tips
- For easy unmolding, briefly dip the bottom of the ramekin in warm water before inverting onto a plate.
- Adjust sweetener to your taste, or use a drizzle of honey if preferred for a richer flavor.
