Lighter Lemon Ricotta Panna Cotta

Ingredients

  • 1.5 cups part-skim ricotta cheese
  • 0.5 cup low-fat milk
  • 2 tbsp sweetener (erythritol or monk fruit)
  • 1 tsp unflavored gelatin powder
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 0.5 tsp vanilla extract
  • 1 cup mixed berries (fresh or frozen)

Instructions

  1. Whisk ricotta, milk, sweetener, lemon juice, zest, and vanilla in a bowl until smooth.
  2. Sprinkle gelatin over 2 tablespoons cold water in a small saucepan; let bloom 5 minutes. Gently heat until gelatin dissolves, then stir into the ricotta mixture.
  3. Divide mixture evenly into four ramekins or small glasses. Chill for at least 4 hours, or until set.
  4. Simmer berries with a splash of water until softened for a quick compote. Serve panna cotta with cooled berry compote.

Tips

  • For easy unmolding, briefly dip the bottom of the ramekin in warm water before inverting onto a plate.
  • Adjust sweetener to your taste, or use a drizzle of honey if preferred for a richer flavor.
