Healthy Hungarian Fruit Pacsinta
Pacsinta, or Hungarian pancakes, are a beloved treat. Our version lightens up the classic with whole wheat flour and a simple fruit filling. It's a delightful way to enjoy a sweet moment without overdoing it.
Ingredients
- 1 cup whole wheat pastry flour
- 2 large eggs
- 1 cup skim milk
- 2 tbsp erythritol or other zero-calorie sweetener
- 1 tsp vanilla extract
- Pinch of salt
- Cooking spray
- 1.5 cups mixed berries or sliced peaches
Instructions
- In a large bowl, whisk together the whole wheat pastry flour, eggs, skim milk, erythritol, vanilla extract, and salt until smooth. Let the batter rest for 5 minutes.
- Heat a non-stick pan over medium heat and lightly coat with cooking spray. Pour a thin layer of batter (about 1/4 cup) into the pan, swirling to cover the bottom.
- Cook for 1-2 minutes until edges are set and bubbles appear, then flip and cook for another minute until golden. Repeat with remaining batter to make 8 thin pancakes.
- Fill each pacsinta with a generous spoonful of mixed berries or sliced peaches, then roll or fold. Serve immediately.
