Pacsinta, or Hungarian pancakes, are a beloved treat. Our version lightens up the classic with whole wheat flour and a simple fruit filling. It's a delightful way to enjoy a sweet moment without overdoing it.

Ingredients

  • 1 cup whole wheat pastry flour
  • 2 large eggs
  • 1 cup skim milk
  • 2 tbsp erythritol or other zero-calorie sweetener
  • 1 tsp vanilla extract
  • Pinch of salt
  • Cooking spray
  • 1.5 cups mixed berries or sliced peaches

Instructions

  1. In a large bowl, whisk together the whole wheat pastry flour, eggs, skim milk, erythritol, vanilla extract, and salt until smooth. Let the batter rest for 5 minutes.
  2. Heat a non-stick pan over medium heat and lightly coat with cooking spray. Pour a thin layer of batter (about 1/4 cup) into the pan, swirling to cover the bottom.
  3. Cook for 1-2 minutes until edges are set and bubbles appear, then flip and cook for another minute until golden. Repeat with remaining batter to make 8 thin pancakes.
  4. Fill each pacsinta with a generous spoonful of mixed berries or sliced peaches, then roll or fold. Serve immediately.

Tips

  • For extra protein, whisk in 2 tablespoons of unflavored protein powder with the dry ingredients.
  • If the batter is too thick, add a splash more milk until it reaches a thin, pourable consistency.
