Thai Chicken Patties with Lime and Chili

Ingredients

  • 1 lb ground chicken (93% lean)
  • 2 tbsp fresh lime juice
  • 1 tbsp fish sauce (or soy sauce)
  • 1 tbsp finely chopped fresh ginger
  • 2 cloves garlic, minced
  • 1 red chili, deseeded and finely minced (or 1/2 tsp chili flakes)
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp coconut oil (for cooking)

Instructions

  1. In a medium bowl, gently combine ground chicken, lime juice, fish sauce, ginger, garlic, minced chili, and cilantro until just mixed.
  2. Form the mixture into 8 small patties, about 1/2 inch thick.
  3. Heat coconut oil in a large non-stick skillet over medium-high heat. Cook patties for 4-5 minutes per side, until golden brown and cooked through.
  4. Serve hot with a side of crisp lettuce wraps or fresh cucumber slices.

Tips

  • Don't overmix the chicken; it can make the patties tough. Mix just until combined.
  • Adjust the amount of chili to your preferred spice level, or omit for a milder flavor.
