Ingredients

  • 300g lean ground pork (or beef)
  • 1 small onion, finely minced
  • 1 egg
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 2 tbsp breadcrumbs (or oat flour)
  • 200g white cabbage, thinly shredded
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. In a bowl, combine ground meat, minced onion, egg, parsley, chives, breadcrumbs, salt, and pepper. Mix well and form into four equal patties.
  2. Heat a non-stick skillet over medium-high heat. Cook patties for 4-5 minutes per side until browned and cooked through.
  3. While patties cook, prepare the salad: In a separate bowl, whisk together Dijon mustard, apple cider vinegar, olive oil, salt, and pepper.
  4. Add shredded cabbage to the dressing and toss thoroughly to coat. Serve the warm meat patties immediately with the mustard cabbage salad.

Tips

  • For extra crunch, add a finely diced apple or a few caraway seeds to the cabbage salad.
  • Make the patties ahead of time and store them raw in the fridge for up to 24 hours for quick cooking.
