Classic Chili Con Carne for Meal Prep

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef (85/15 or 90/10)
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 2 tbsp chili powder, 1 tsp cumin, 1/2 tsp smoked paprika
  • 1 cup beef broth

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
  2. Stir in chopped onion and minced garlic, cooking until softened, about 5 minutes. Add chili powder, cumin, and smoked paprika; cook for 1 minute until fragrant.
  3. Pour in crushed tomatoes, kidney beans, and beef broth. Bring to a simmer, then reduce heat to low, cover, and cook for at least 45 minutes, stirring occasionally.
  4. Taste and adjust seasonings. Serve immediately or cool completely before dividing into meal prep containers for refrigeration or freezing.

Tips

  • For extra depth, simmer the chili longer on low heat; flavors deepen with time.
  • Store individual portions in airtight containers for up to 4 days in the fridge, or freeze for up to 3 months.
