Chicken and Broccoli Stir-fry

Ingredients
- 1 lb (450g) boneless, skinless chicken breast, cut into 1-inch pieces
- 4 cups broccoli florets
- 2 tbsp soy sauce (low sodium preferred)
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp olive oil or neutral cooking oil
Instructions
- In a bowl, toss chicken pieces with 1 tbsp soy sauce, sesame oil, and cornstarch. Heat olive oil in a large skillet or wok over medium-high heat.
- Add chicken to the hot pan and stir-fry until lightly browned and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.
- Add broccoli florets to the same pan, adding a splash of water if needed. Stir-fry for 3-5 minutes until crisp-tender. Add minced garlic and grated ginger, stir-fry for 1 minute until fragrant.
- Return cooked chicken to the pan with broccoli. Add remaining 1 tbsp soy sauce and toss everything together for 1-2 minutes until heated through. Serve immediately.
Tips
- For extra flavor, add a pinch of red pepper flakes with the garlic and ginger.
