Cheesy Zucchini Fritters
Sometimes you just need a savory bite that isn't heavy. These cheesy zucchini fritters are my go-to when I have extra zucchini and want something quick. They come together in minutes and are surprisingly satisfying.
Ingredients
- 2 medium zucchinis, grated
- 1 large egg, beaten
- 1/4 cup all-purpose flour
- 1/4 cup shredded cheddar cheese
- 1/4 tsp garlic powder
- Salt and freshly ground black pepper to taste
- 2 tbsp olive oil, for frying
Instructions
- Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much excess water as possible.
- In a medium bowl, combine the squeezed zucchini, beaten egg, flour, shredded cheese, garlic powder, salt, and pepper. Mix until just combined.
- Heat olive oil in a large non-stick skillet over medium heat. Drop spoonfuls of the mixture into the pan, flattening slightly to form fritters.
- Cook for 3-4 minutes per side, until golden brown and cooked through. Serve warm.

- Squeezing the zucchini thoroughly is key to crispy fritters.
- These fritters can be made ahead and reheated gently in a toaster oven for a quick snack.
