Herbed Sweet Potato & Feta Skins

Herbed Sweet Potato & Feta Skins

Ingredients

  • 2 small sweet potatoes (about 8 oz each)
  • 1 tbsp olive oil
  • 1 tsp dried mixed herbs (like oregano, thyme, rosemary)
  • 1/2 tsp garlic powder
  • 1/4 cup crumbled feta cheese
  • 2 tbsp fresh chives, chopped
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes several times with a fork, then bake directly on the oven rack for 30-40 minutes until very tender.
  2. Once cool enough to handle, slice each potato in half lengthwise. Carefully scoop out most of the flesh, leaving about a 1/4-inch border in the skin.
  3. In a small bowl, mash the scooped sweet potato flesh with olive oil, dried herbs, garlic powder, salt, and pepper until well combined. Stir in half of the crumbled feta.
  4. Spoon the mixture back into the sweet potato skins. Top with the remaining feta and bake for another 10-15 minutes, or until heated through and the feta is lightly golden. Garnish with fresh chives before serving.

Tips

  • For crispier skins, brush the outside of the scooped skins with a little extra olive oil before stuffing and baking.
  • These skins can be prepped ahead and reheated in the oven or air fryer for a quick snack later.
