Herbed Sweet Potato & Feta Skins
Transform humble sweet potatoes into a vibrant, savory snack. Baking them until tender, then stuffing with herbs and feta creates a delicious bite. It's a smart way to enjoy a warm, wholesome treat without overdoing the calories.
Ingredients
- 2 small sweet potatoes (about 8 oz each)
- 1 tbsp olive oil
- 1 tsp dried mixed herbs (like oregano, thyme, rosemary)
- 1/2 tsp garlic powder
- 1/4 cup crumbled feta cheese
- 2 tbsp fresh chives, chopped
- Salt and freshly ground black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Pierce sweet potatoes several times with a fork, then bake directly on the oven rack for 30-40 minutes until very tender.
- Once cool enough to handle, slice each potato in half lengthwise. Carefully scoop out most of the flesh, leaving about a 1/4-inch border in the skin.
- In a small bowl, mash the scooped sweet potato flesh with olive oil, dried herbs, garlic powder, salt, and pepper until well combined. Stir in half of the crumbled feta.
- Spoon the mixture back into the sweet potato skins. Top with the remaining feta and bake for another 10-15 minutes, or until heated through and the feta is lightly golden. Garnish with fresh chives before serving.
Tips
- For crispier skins, brush the outside of the scooped skins with a little extra olive oil before stuffing and baking.
- These skins can be prepped ahead and reheated in the oven or air fryer for a quick snack later.
