Ingredients

  • 10 oz lean steak (sirloin or flank)
  • 1 tbsp olive oil, plus 2 tbsp for dressing
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh or frozen, thawed)
  • 1 red bell pepper, diced
  • 1/4 red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 3 tbsp fresh lime juice
  • 1 tsp ground cumin
  • Salt and freshly ground black pepper to taste

Instructions

  1. Season steak with salt and pepper. Heat 1 tbsp olive oil in a skillet or grill pan over medium-high heat. Cook steak for 3-5 minutes per side for medium-rare, or to desired doneness. Rest for 5 minutes, then slice thinly against the grain.
  2. In a medium bowl, combine the rinsed black beans, corn, diced red bell pepper, finely diced red onion, and chopped cilantro.
  3. In a small bowl, whisk together the remaining 2 tbsp olive oil, lime juice, ground cumin, salt, and pepper until well combined.
  4. Pour the dressing over the black bean and corn mixture and toss gently to coat. Arrange the sliced steak on top of the salad and serve immediately.
